Baby carrots and chopped potatoes tossed in olive oil, salt and pepper.

Recipe Ingredients for Carratoes

2 tbsp Extra Virgin Olive Oil
3 NLEA+serving baby carrots
3 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin, Baked
1 Salt and Pepper

Recipe Directions for Carratoes

  1. Chopped potatoes into cubes or thick slices.

  2. Combine potatoes with carrots on baking sheet.

  3. Drizzle 2 tbsp of the oil (2 servings) over potatoes and carrots.

  4. Add salt and pepper to taste.

  5. With spatula, mix oil, salt and pepper well into the carrots and potatoes until all are coated.

  6. Bake at 450 degrees for 30 minutes (check at 20 minutes).
