Recipe Ingredients for Carrabba's Chicken Marsala

5.5 tbsp Unsalted Butter
1 oz Prosciutto Riserva Stradolce
0.75 tbsp chopped Shallots
2 tsp Garlic
8 oz Mushrooms Sliced
4 serving Cooking Wine
1/4 tsp Black Pepper
1 cup Chicken Broth
0.75 tbsp Corn Starch
10 grams Parsley
1 oz Heavy Whipping Cream
1.25 tsp Salt, Table
0.5 tsp Oregano
0.5 Teaspoon Thyme
0.5 tsp Parsley, Dried
0.25 tsp Marjoram, Dried
0.25 tsp Garlic Powder

Recipe Directions for Carrabba's Chicken Marsala

  1. Melt butter over low heat in a

  2. medium saucepan.

  3. Turn heat up to medium/high to saute the prosciutto in the melted butter for about 2-3 minutes. (Becareful not to burn the butter!), add shallots and garlic and saute for about 30 seconds. Add Marsala wine, simmer for anotehr 30 seconds or so, then add mushrooms (drain off liquid) and black pepper). Simmer over medium/high heat for 5 minutes.

  4. Dissolve corn starch in chicken stock. Add stock to the saucepan and simmer for an additional 5 minutes.

  5. Add Parsley and cream to the sauce and simmer for 3 - 4 minutes or until thick. Remove from heat, cover until needed.

  6. Preheat BBQ grill, combine spices Salt, oregano, thyme, parsley, marjoram and garlic powder and grind to a finer blend.

  7. Brush each chicken breast with olive oil if desired and sprinkle spice blend over both sides of the chicken breast and grill for 6-8 minutes per side or until done. Give chicken a 1/4 turn during cooking per side to give the cross grill marks.

  8. Serve entree by arranging each chicken breast on a plate. Spoon 1/4 of the Marsala sauce over each serving of chicken and serve with whatever side you choose.

  9. Yummy! Feel free to substitute fat free, low fat, low calorie items etc...
