This soup is very hearty (almost a stew) and tastes great even with no added salt.

Recipe Ingredients for Carolyn's Minestrone Soup (no salt)

6 cups water
28 oz tomatoes, diced
8 oz tomato sauce
1 tsp beef bouillon
1/2 cup red wine
1/2 cup cabbage, chopped
1 carrot, diced
1 onion, diced
1 stalk celery
1/2 cup green beans
1/2 cup corn
16 oz great northern beans
4 oz uncooked pasta
8 oz pork sausage
1 tsp pepper
1 tsp greek seasoning

Recipe Directions for Carolyn's Minestrone Soup (no salt)

  1. Place all ingredients in a large pot.

  2. Split sausage skin and crumble into mixture.

  3. Bring to rapid boil.

  4. Reducer heat to simmer.

  5. Cook with lid off for 2 hours (or until soup reduces and thickens to taste)
