The cheesiest Mac n' Cheese with a little something special

Recipe Ingredients for Carolyn's Mac n' Cheese done Fancy

3 1/2 ounces unsalted butter
1 tbsp olive oil
14 oz mushrooms, sliced
1 small onion, sliced
4 cloves garlic, diced
20 oz extra-sharp cheddar cheese
1/2 cup grated parmesan cheese
1 cup bread crumbs
1/2 cup all purpose flour
3 tbsp parsley
4 cups fat free milk
2 tbsp Cooking wine (Sherry)
1 tbsp salt
1 tbsp black pepper
1 tsp nutmeg

Recipe Directions for Carolyn's Mac n' Cheese done Fancy

  1. Heat the oven to 375

  2. Bring a pot of water to boil

  3. Melt 1/2 ounce of unsalted butter and the olive oil in a pan and sautee onions until they start to turn yellow, then add your sliced mushrooms and half of your garlic for about 5 minutes. Add the sherry and cook until the liquid is completely absorbed (or evaporated). Set aside.

  4. Melt the rest of your butter in a large sauce pan and whisk in your flour. Heat the milk up until it is very hot and then pour it slowly into your pan of butter and flour, whisking the entire time. Once the milk is all mixed in you may want to switch to a wooden spoon. Take this pot off the heat.

  5. Add pasta to boiling water and cook for about 6-8 minutes until it is al dente (mostly cooked but is still a little firm), drain the pasta well.

  6. Grate your cheddar cheese and add it to your butter/flour/milk mixture and stir well. Add the nutmeg and salt and pepper to taste (for me it was 1 tbsp each, but it may be different for you).

  7. Combine mushrooms/onion/sherry with your cheese sauce (butter/flour/milk/cheese) and the pasta.

  8. Pour the combined mixture into a large baking pan (10X12X2)

  9. Combine breadcrumbs, garlic and parmesan cheese and sprinkle over the mac n' cheese.

  10. Place in the oven for 30-35 minutes until the top is brown and the cheese is bubbling.

  11. ENJOY!
