Recipe Ingredients for Carolyn's Healthy Carrot Bran Muffins

2/3 cup cooked carrots, mashed
1 1/4 cups orange juice
2 tablespoons corn oil
1 1/2 cups all bran buds
1 tablespoon baking powder
1/2 cup unbleached flour
3/4 cup whole wheat flour
1/2 cup raisins
1 teaspoon cinnamon
2 tablespoons walnuts, chopped

Recipe Directions for Carolyn's Healthy Carrot Bran Muffins

In a bowl mix carrots, ornage juice, oil and bran buds. Let set for 10 minutes. Meanwhile, mix baking powder, flours, raisins, cinnamon and walnuts in a bowl. Add dry ingredients to wet and mix just until combined. Divide evenly between 12 muffin cups sprayed with non-stick baking spray and bake in 400 degree oven for about 20 minutes.
