Recipe Ingredients for Carolyn's Healthy Banana Bran Muffins

3 bananas, mashed
1/2 cup crushed pineapple, drained
1 cup all bran buds
1/2 cup low-fat buttermilk
1 large egg
1 tablespoon honey
1 teaspoon ground ginger
1/2 teaspoon vanilla
1/2 cup whole wheat flour
2 tablespoons whole wheat flour
2 tablespoons ground flax seed
1 1/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 cup rolled oats
1/2 cup raisins
2 tablespoons walnuts, chopped

Recipe Directions for Carolyn's Healthy Banana Bran Muffins

In a bowl, mix pineapple, banana, buttermilk, egg, raisins, honey and vanilla. Let stand 10 minutes. In a bowl mix all bran buds, ginger, cinnamon, oats, wheat flour, flax seed and baking soda. Mix dry ingredients with wet ingredients until just combined. Divide between 12 muffin cups sprayed with non-stick cooking spray. Bake in 375 degree oven for 20 minutes.
