Recipe Ingredients for carolyn's enchiladas

6 whole wheat tortillas
1/2 c. cheddar cheese
15 oz. crushed tomatoes
2 T. green pepper
1 medium onion
1/2 c. nonfat sour cream
1/2 chicken breast
1 1/2 t. Chili powder
1/2 t. red pepper
2 t. oregano
1/2 c. taco sauce
3/4 c. cheddar cheese

Recipe Directions for carolyn's enchiladas

  1. cook chicken in saucepan until no longer pink inside (slightly browning outside)

  2. add sour cream, onion, cheese, and oregano and cook until cheese is melted.

  3. Add tomato, green pepper, water, chili powder and red pepper.

  4. Simmer.

  5. Roll into whole wheat tortillas in a 9 X 12 ish baking dish.

  6. Add enchilada or taco sauce on top and cheese. Bake for 20ish minutes, then let cool for 10.
