Carol's Whole Wheat Oatmeal Flaxseed Apple muffins

Recipe Ingredients for Carol's Whole Wheat Oatmeal Flaxseed Apple muffins

1 c. old fashioned oats
1 c. soy slender vanilla
2 apples
3/4 c. whole wheat flour
1/4 c. ground flax seed
1/2 c. brown sugar
1 tsp. baking powder
1/2 tsp.baking soda
1/2 tsp. salt
1 tsp. cinnamon

Recipe Directions for Carol's Whole Wheat Oatmeal Flaxseed Apple muffins

Core one apple and grind in food processor with the soy milk. Add the oats and soak about an hour. Core and dice the second apple. Use 2 teaspoons of the brown sugar and mix with the cinnamon & set aside. Mix together the rest of the dry ingredients.Add the diced apple to the apple soymilk mixture then mix in the dry ingedients. Put in lightly greased muffin pan. Sprinkle the brown sugar cinnamon mix on top. Bake at 400 degrees for about 20-25 minutes until done
