Tasty GF version of an old favorite

Recipe Ingredients for Carol's Popovers

3 eggs
1 cup skim milk
1 tablespoon unsalted butter
5.33 tbsp potato starch
1/10 cup sorghum flour
1/10 cup potato starch
0.06 cup tapioca flour
1/4 teaspoon table salt
1/4 teaspoon xanthan gum

Recipe Directions for Carol's Popovers

  1. Preheat oven to 450

  2. Mix all ingredients well.

  3. Pour into greased, warmed muffin tin, equal amounts in each of six cups.

  4. Put in oven for 20 minutes; then lower heat to 350 and bake another 10 to 15 minutes.

  5. Popovers are done when sides are firm and color is golden.

  6. Serve with preserves or honey.
