Recipe Ingredients for Carol's Pad Thai

3/4 c tamarind
2/3 c fish sauce
1/2 c brown sugar
1/4 c Thai chili paste
3 T canola oil
200 g chicken breast
454 g rice noodle
1/2 c carrot
1 c green onion
1 c bean sprouts
1 large egg

Recipe Directions for Carol's Pad Thai

  1. Soak the noodles first.

  2. Cook the Tamarind, fish sauce, sugar and chili paste in a pot separately from the wok.

  3. Heat the oil, add the chicken and brown.

  4. Break an egg into the middle. Let the egg set up, then break and stir.

  5. Add the carrots and cook for 3-4 minutes.

  6. Add the noodles and stir for 3-4 minutes to heat, then add veggies and heat through.

  7. Finally add sauce and heat through.

  8. Serve.

  9. Each portion is 1 cup.
