This delicious meat loaf can be served with mashed potatoes, rice, or pasta.

Recipe Ingredients for Caroline's Zingy Meatloaf

1 lb lean ground beef
1 slice whole wheat bread (made into bread crumbs)
1 large egg
1 medium onion
1 cup ketchup
1 tbsp garlic
2 tsp salt
2 tsp pepper

Recipe Directions for Caroline's Zingy Meatloaf

  1. Add onion to food processor - pulse until onion is in small pieces. Add bread crumbs, then lean ground beef to mixture. Mix on low for 2 minutes, or until mixed thoroughly.

  2. While mixing on low, add egg, ketchup (and Frank's Red Hot Sauce to make it zingy), garlic, salt and pepper. Mix on low for 2 more minutes, or until fully mixed.

  3. Spoon mixture into small meat loaf pans, and cook for 30 minutes at 450 degrees. Makes 3 small loafs or 1 large loaf.
