Recipe Ingredients for Carob Zucchini Banana Muffins

1 cup whole wheat pastry flour
1 zuchinni, grated
2 tbsp raisins
3 tablespoons carob powder
1 1/2 tsp baking powder
1/2 cup unsweetened applesauce
1 large ripe banana, mashed
2 tablespoons milk
2 tbsp agave nectar

Recipe Directions for Carob Zucchini Banana Muffins

  1. Preheat oven to 375*.

  2. Grate zuchinni and press with paper towels until as much water as possible is removed (getting as much out as you can is key!).

  3. Mix all ingredients, until well combined.

  4. Cover baking sheet with parchment paper.

  5. Form 8 equally sized rounds of batter and bake for 15-16 minutes.

  6. Remove from baking sheet and let cool on a wire rack before diggin? in!
