A delicious egg-free alternative to chocolate cupcakes.

Recipe Ingredients for Carob Cupcakes

1/4 cup whole wheat pastry flour
1/2 cup carob chips
2 tbsp. water
1/4 cup yogurt
1 tsp. honey
1 tsp. molasses
1/4 tsp. vanilla
1/2 tsp. baking powder
1/8 tsp. baking soda
1/8 tsp. salt
1/2 scoop Stevia Powder (scoop)

Recipe Directions for Carob Cupcakes

  1. Preheat the oven to 375F

  2. Start to melt the carob chips (I recommend using a double-boiler)

  3. Combine dry ingredients in a medium bowl

  4. Combine yogurt, honey, molasses, and vanilla in a small bowl. Stir by hand until smooth.

  5. If you are making cupcakes, add water to the liquid mixture, stir until well combined. If you are making Mousse, leave water separate for now

  6. Fold melted carob chips into liquid mixture until smooth

  7. Fold liquid and dry mixtures together in medium bowl until combined. If you are making mousse, add the water 1tbsp at a time immediately after combined, then fold until the mousse is combined and the right texture.

  8. For cupcakes, after dry/liquid are combined, drop by spoon into paper cupcake-cup lined pan

  9. Bake at 375F for 10-12min or until a toothpick comes out damp but clean

  10. Allow to cool for a few minutes before serving
