New Mexican pork marinated in red chile sauce and slow-cooked.

Recipe Ingredients for Carne Adovada

48 oz raw Pork Stew Meat
2 tbsp Vegetable Oil, Canola
2.5 oz Wheat Flour, White, All-purpose, Enriched, Bleached
6 tsp Chile Powder
4 clove Garlic
2.5 tsp Oregano
2 tsp Cumin
0.5 tsp Cayenne
0.75 tsp Salt, Table
2 tbsp Butter

Recipe Directions for Carne Adovada

  1. Put on a kettle of water to boil.

  2. In frying pan, heat oil over medium heat. Whisk in 3 Tbsp flour and brown until light golden brown. Blend in 4Tbsp chile powder. Slowly add 2.5 cups of warm water, whisking until all lumps are removed. Add garlic, 2 teaspoons oregano, cumin, cayenne pepper, and salt. Simmer on medium heat 15 minutes, stirring frequently. Remove and cool.

  3. Place pork in gallon plastic bag. Add chile mixture and marinade over night.

  4. Heat in slow cooker 6-7 hours on low heat. Remove meat from slow cooker. Stir in remaining 2 Tbsp chile powder and 1/2 tsp oregano.

  5. Heat a small non-stick skillet over medium and melt butter. Gradually add the 2 Tbsp flour, whisking constantly, until completely blended and golden brown.

  6. Transfer mixture to chile sauce, whisking it in to blend. Remove from heat. Add meat, mix & coat.
