1 tablespoon olive oil
2 cups thinly sliced onion
1 teaspoon sugar
1/4 teaspoon salt
9 ounces baby spinach
4 ounces goat cheese
2 medium tomatoes, thinly sliced

  1. cook the onions in sugar and salt until dark brown

  2. add 1 tbsp water and spinach till wilted

  3. sprinkle goat cheese over tortilla and add onions and spinach
