Recipe Ingredients for Carmelized Onion & Sweet Red Onion Pasta

8 oz pasta, pappardelle's sweet red onion
1 tbsp butter
1 tbsp olive oil, extra virgin
2 onions, large, halved & thinly sliced
1 red bell pepper, chopped
1/2 cup water
1/2 tbsp balsamic vinegar

Recipe Directions for Carmelized Onion & Sweet Red Onion Pasta

  1. Melt 1/2 Tbsp butter with oil in skillet of med-high heat. Add onions and saute until tender and carmelized, about 20 minutes. Add peppers and saute 5 minutes.

  2. Add water and vinegar. Reduce heat to medium and simmer until sauce reduces slightly, about 5 minutes. Whisk in remaing 1/2 T butter. Season with salt and butter. Remove from heat and cover to keep warm.

  3. Cook pasta in a large pot of boiling water until al dente (~8 min); drain. Return to pot. Add sauce and toss to coat. Transfer to serving bowl.
