Recipe Ingredients for Carmelized Onion Quesadillas

1 tbsp olive oil
1 red onion, sliced thin
4 scallions, sliced
2 cloves garlic, minced
1 tsp ground cumin
1/4 tsp dried oregano
1 tbsp lime juice
4 servings Mission Flour Tortillas, Soft Taco, 8 Inch
2 cups reduced fat Monterey jack cheese, shredded

Recipe Directions for Carmelized Onion Quesadillas

  1. Pre-heat oven to 400 degrees.

  2. Heat oil in skillet over medium heat and sautee onion and garlic until softened, stirring occasionally; usually about 10 minutes. Stir in cumin and oregano. Remove from heat and stir in lime juice.

  3. Place 2 tortillas on a baking sheet and spread the onion mixture equally on the two. Sprinkle with equal amounts of cheese. Top with remaining tortillas and bake for about 8 minutes until the edges are golden.

  4. Let stand 5 minutes and cut each into sixths with a pizza cutter. Garnish with salsa, guacamole and sour cream if desired.
