Recipe Ingredients for Carmelized Onion & Potato Quiche

2 small Yukon gold potatoes
1 pastry crust
24 oz firm tofu
2 tbsp ranch dressing
50 g (3 tbsp) nacho cheese sauce
2 tbsp water
1 tbsp nutritional yeast
1 1/2 tsp salt
3/4 tsp smoked paprika
1/2 tsp tumeric
1/2 tsp black pepper
2 small yellow onions, sliced
2 tsp Parmesan (I make my own)

Recipe Directions for Carmelized Onion & Potato Quiche

  1. Peel and dice potatoes into 3/4-inch cubes. Drop into pot of cold water. Season water with salt. Simmer over med-high heat for about 10-15 minutes, just until they become tender. Drain and put potatoes in an ice bath to stop the cooking process.

  2. Preheat oven to 450 degrees.

  3. Put crust in pie/pastry dish and poke holes in the bottom and sides to prevent bubbles. Bake pastry crust for 10 minutes. Remove from oven and set aside to cool.

  4. Put sliced onions in skillet with a couple teaspoons of canola or olive oil over medium heat and sauté until carmelized, about 10-15 minutes.

  5. In food processor, mix together the rest of the ingredients, minus the parmesan, parsley, onions, and potatoes.

  6. Turn oven temp down to 400 degrees.

  7. Pour tofu mixture into cooled pastry crust. Gently stir in carmelized onions and potatoes. Sprinkle parmesan over the top.

  8. Cover edges of crust with foil and bake for 35-45 minutes, until golden brown. Let stand for 10-15 minutes before serving.

  9. If you don't like the taste or smell of bacon, leave out the smoked paprika. Enjoy!
