Carl's Vegetable Couscous Recipe

A re-interpretation of North African vegetable couscous. You can change the vegetables based on your preferences. Use between 1 and 1 1/2 cups vegetables in total. The 1/2 tsp salt is really 1 tsp chicken concentrate (Bovril or OXO brand). I couldn't find it in the database. If served with red meat (beef/lamb) use red wine and beef concentrate instead.

Recipe Ingredients for Carl's vegetable couscous

80 grams yellow peppers
69 grams fennel bulb
31 grams jalapeno peppers
46 grams shallot
1 tbsp olive oil
1/4 cup dry white wine
312 grams chicken broth
3/4 tsp basil
3/4 tsp tarragon
1 cup couscous

Recipe Directions for Carl's vegetable couscous

  1. Dice vegetables finely (less than 1/4 inch in size).

  2. Fry vegetables in olive oil in a sauce pan for

  3. 3-5 minutes

  4. Add wine and beef broth. Bring to a simmer and cook for 2 minutes.

  5. Add couscous, stir well. When it returns to simmering place a lid on the sauce pan and remove from heat.

  6. Wait at least 5 minutes.

  7. If you like garlic add one clove finely diced after the vegetables. Cook for about one minute before adding liquid.
