Carl's One Pan Meal Recipe

I created this thinking I could make something healthier and cheaper than Hamburger Helper. It's not cheaper than Hamburger Helper, but its is healthier. The portion sizes in the ingredient list are fudged a little to get a calorie count. I am adding this recipe so my wife and daughter can add a serving to their food log's. Read the directions carefully if you want to try it.

Recipe Ingredients for Carl's One pan meal

120 grams chopped onion
120 grams chopped celery
120 grams zucchini
250 grams chopped mushrooms
1 tbsp olive oil
2 cloves garlic
2 tsp rosemary
2 tsp oregano
1/4 tsp pepper
350 grams extra lean ground beef
2 1/2 cups beef broth
1/2 cup red wine
1/2 cup water
5 1/2 ounces tomato paste
1 tsp Worcestershire sauce
120 grams Whole Wheat Pasta
2 tbsp corn starch

Recipe Directions for Carl's One pan meal

  1. chop the vegetables into small pieces (about 1/4 inch square).

  2. Fry the vegetables in the olive oil in a large pan (about 5 minutes) until onions are soft.

  3. Add garlic, oregano, and rosemary. Cook for a couple more minutes.

  4. Add the ground beef . Cook until well browned (10 minutes).

  5. Add the beef broth (I used Presidents Choice No salt added), and wine . Simmer the meat and vegetable mixture for 10 minutes.

  6. Add the pasta (I used two cups of Catelli Healthy Harvest yolk free egg noodles). Return to simmer, cook 10 minutes.

  7. Mix the corn starch in a small amount of cold water, add and mix thoroughly.

  8. Serve once thickened.
