Recipe Ingredients for Carla's Zuchinni Fritters

4 cups grated zuchinni
1/2 cup onion
1/2 cup egg whites
1 egg
1/3 cup soy flour
2 teaspoons salt
1/4 cup parmesan cheese, grated
2 tablespoons olive oil

Recipe Directions for Carla's Zuchinni Fritters

  1. Grate zuchiinni and onion.

  2. Mix eggs, flour, salt, parmesan cheese. Fold in zuchinni and onions.

  3. Heat olive oil in pna and drop 2 tablespoons of zuchinni mixture

  4. in small batches. Cook a few minutes on both sides until golden.

  5. Serve with yoghurt and/or sour cream
