Crusty bread or rice complements this dish. Mussels are also excellent when cooked in this manner. You can also use Trader Joe's Steamer Clams which has only 70 mg. of sodium and 25 mg. cholesterol. If you like it spicy add pepper flakes to taste.

Recipe Ingredients for Carla's Hot and Spicy Curried Clams

3 1/2 oz (Whole Foods Market) clam,small
2 tablespoons oil
1/4 cup onion, chopped
1 teaspoon ginger,minced
1 tablespoon curry powder
1 tablespoon reduced sodium soy sauce
2 tablespoons broth or clam juice

Recipe Directions for Carla's Hot and Spicy Curried Clams

  1. If desired you can add 1 tsp. of dried chili pepper flakes or 1/2 tablespoon of fresh chili peppers.

  2. You can also add 2 tablespoons Sake or clam juice. Also 1 tablespoon cornstarch or substitute dissolved in 2 tablespoons of water & 1 tsp or sugar or sugar substitute.

  3. Clean clams by placing in water until they expel sand.

  4. Heat oil over medium heat.

  5. Add onions and sautee. Add ginger, chili peppers, curry powder, and clams and toss for 1 minute.

  6. Add tomatoe, wine or broth, soy sauce, sugar or sugar substitute, mixing thoroughly. Cover and cook 8-10 minutes until clams are opened.

  7. Transfer to a large bowl and serve.
