Carla's Asian Coleslaw Recipe

Toss Coleslaw with Carla's Spicy Coleslaw Dressing. Low calorie and carb version of Emeril Legasse's Crunchy Slaw. Can also substitute napa cabbage for cabbage. Great with a combination of red and green cabbage. Also good with honey peanuts.

Recipe Ingredients for Carla's Asian Coleslaw

16 oz shredded cabbage
1/2 cup cilantro, chopped
1/4 cup red onion, chopped
1/8 cup carrot, julienned
2 cups spinach, chopped
2 green onions, chopped
2/3 cups peanuts, roasted

Recipe Directions for Carla's Asian Coleslaw

  1. Julienne carrots. Chop cabbage, spinach, and onions.

  2. Mix the above ingredients.

  3. Chop cilantro and reserve 1/4 cup to sprinkle on top.

  4. Toss all the ingredients above with Carla's Spicy Coleslaw Dressing.

  5. Roast peanuts, if desired, in oven at 350F for a few minutes. Adjust seasonings. If desired add a squeeze of lime juice.

  6. Sprinkle peanuts and reserved cilantro on coleslaw just before serving.

  7. Great with shrimp or chicken satay. Also great with ribs or BBQ chicken.
