quick meal that's great if you want a healthier breaded chicken! My husband loves this salsa to go with it!

Recipe Ingredients for Caribbean chicken and pineapple salsa

1 1/4 cup Fiber One Cereal
1 pound boneless skinless chicken breasts
1/2 cup milk
2 teaspoon dijon mustard
1/2 teaspoon hot sauce
8 ounce canned crushed pineapple in juice
1/4 cup red bell pepper, chopped
1/4 cup papaya
1 tablespoon cilantro, chopped
1 teaspoon sugar
1 teaspoon lemon juice

Recipe Directions for Caribbean chicken and pineapple salsa

  1. Heat oven to 400F spray cookie sheet with cooking spray. Place cereal in plastic bag and crush with a rolling pin, alternatively can be crushed using food processor. Place in a shallow dish and mix with seasoning of your choice (I like 2 teaspoons of cajun or jerk style).

  2. In second bag or bowl mix milk, mustard, pepper sauce, and chicken. remove chicken and coat with seasoned cereal. Place on cookie sheet.

  3. Bake 15 to 20 minutes, meanwhile mix salsa ingredients. Cover and refrigerate until chicken is ready. Serve!
