Directions
Soak, or use your favorite method for rehydrating, beans.

In large saucepan heat oil over medium heat, cook onions until tender, then cook with peppers, ginger, garlic, allspice and thyme for 3 minutes longer.

Add beans and water, boil. Reduce heat and simmer for an hour and a half.

Add sweet potatoes, sugar, and salt. Boil again. Reduce heat and simmer for another 30 minutes - until ingredients are tender.

Add in cilantro before serving.
