Recipe Ingredients for Carbonnades a la Flamande

10 ounces eye of round
1 tsp butter
8 ounces onions
2 cloves garlic
1/2 cup beef stock
1/4 cups beer
2 tsp brown sugar
3 g parsley
1 tsp bay leaves
1/4 tsp thyme
1/2 tbsp cornstarch
2 tsp white wine vinegar

Recipe Directions for Carbonnades a la Flamande

  1. Preheat oven to 325. Cut beef into slices 2x4x1/2 inch. Dry on paper towels. Heat butter in skillet until almost smoking. Brown the beef slices quickly, a few at a time, and set aside.

  2. Reduce heat, stir the onions into the fat in the skillet and brown lightly for about 10 minutes, stirring frequently. Remove from heat, season with salt and pepper, and stir in the garlic.

  3. Arrange halt the browned beef in a casserole and season lightly with salt and pepper. Spread half the onions over the beef. Repeat with the rest of the beef and onions.

  4. Pour off fat from skillet and heat stock or bouillon, scraping up fonde. Pour over meat. Add enough beer so the meat is barely covered. Stir in the brown sugar. Bury the herb bouquet among the meat slices. Bring casserole to the simmer on top of the stove. Cover the casserole and place in lower third of preheated oven. Regulate heat so liquid remains at a very low simmer for 2 1/2 hours at the end of which time the meat should be fork-tender.

  5. Remove herb bouquet. Drain cooking liquid out of casserole into a saucepan and skim off fat. Beat the starch and wine vinegar mixture into the cooking liquid and simmer for 3 to 4 minutes. Correct seasonings.

  6. When ready to serve, cover the casserole and simmer slowly for 4 to 5 minutes until the meat is thoroughly heated through. Plate and serve.
