Recipe Ingredients for Carbonara Sauce

250 g bacon, diced
1 (medium) onion, finely chopped
2 garlic cloves, finely chopped
1 ml chili flakes, hot red
45 ml all purpose flour
500 ml milk
125 ml cream
2 eggs
250 ml parmesan cheese, grated
30 ml parsley, fresh chopped
2 ml salt
2 ml pepper, black ground

Recipe Directions for Carbonara Sauce

  1. Place bacon pieces in a deep skillet or wide saucepan. Cook until crisp. Drain on paper towels and reserve.

  2. Discard all but 3 tbsp/45 ml fat from pan. Return to heat. Add onions, garlic and chili flakes. Cook 2 to 3 min until tender.

  3. Stir in flour. Cook 2 to 3 mins longer.

  4. Whisk in Milk and cream. Bring to the boil. Reduce heat. Simmer 5 minutes.

  5. Beat eggs together lightly. Whisk into sauce with cheese and parsley. Cook 2 minutes. Add salt and pepper.

  6. Toss with 3/4 lb (375g) spaghetti, cooked.

  7. Sprinkle with additional freshly ground black pepper and reserved bacon.
