A high protein, low carb recipe for a veggie meatloaf (only carbs are from veggies)

Recipe Ingredients for Carb Free Cottage Cheese Loaf

16 oz cottage cheese
4 eggs
1 tsp worcestershire
14 1/2 oz tomato sauce
2 poblano pepper
1 stalk,+large+11"-12"+long celery rib
1/2 cup carrots, shredded
1 cup almonds, smashed
1 cup walnuts
8 oz mushrooms, chopped
1 onion

Recipe Directions for Carb Free Cottage Cheese Loaf

  1. Saute onions, mushrooms, pepper, carrots, and celery in a pan with a little olive oil.

  2. Put almonds in a food processor and grind until fine (to make almond meal).

  3. Combine all remaining ingredients and then stir in almond meal and sauteed vegetables.
