Great with roast chicken! I'm going to try it with no-fat half and half instead of butter to lighten the fat content.

Recipe Ingredients for Caramelized Onion Sauce

2 tbsp olive oil
4 yellow onions, sliced thinly
1 cup white wine
1 3/5 g (5 sprigs) fresh thyme
1 4/5 g bay leaf (1 leaf)
1/4 tsp whole black peppercorns
3 cups low-sodium chicken broth
2 tbsp veal demi-glace
1/4 cup unsalted butter

Recipe Directions for Caramelized Onion Sauce

  1. Heat oil in a large saucepan; add onions, stirring to coat. Saute the onions until they reach a deep caramel color - about 15 minutes over medium heat.

  2. Add the wine and deglaze the pan. Simmer about 3 minutes until the liquid has almost evaporated.

  3. Add the thyme sprigs, bay leaf, and peppercorns. Mix well. Add the stock and demi-glace and bring to a boil. Reduce heat and simmer about 30 minutes or until stock is reduced by 1/2.

  4. Remove from heat and pass through a sieve, squeezing the onions to extract all of the juice. Discard the solids.

  5. Place sauce over medium heat and add butter. Lightly season with salt and pepper and keep warm.
