Recipe Ingredients for Caramelized Halibut with Citrus Salsa

1 1/2 lbs Halibut, skin on
2 tbsp sugar
1 1/2 tsp orange zest
1 tsp salt
1/4 tsp black pepper
1 tsp orange zest
2 cups fresh oranges, peeled and diced
1 cup fresh pineapple, peeled and diced
2 tbsp fresh cilantro, minced
1 tbsp shallot, minced
2 tbsp jalapeno, seeded and diced

Recipe Directions for Caramelized Halibut with Citrus Salsa

  1. Rinse fish gently and pat dry. Place fish skin side down in a shallow dish. For the rub, stir together the 1 1/2 tsp of orange zest, salt, and black pepper. Sprinkle evenly over fish and rub evenly over fish (not on skin side). Cover and marinade for 8-24 hours, as desired.

  2. For salsa, combine 1 tsp orange zest, oranges, pineapple, cilantro, shallot and jalapeno. Cover and chill until ready to serve or up to 24 hours.

  3. Drain fish, discarding liquid.

  4. Grill over medium heat for 12 minutes or until fish flakes easily.

  5. Serve with salsa.
