Caramelized Fritata Recipe

This fritata is very light and full of flavor.

Recipe Ingredients for Caramelized Fritata

1 cup red potatoes, cubed
4 cups onion, sliced
1/2 tsp salt
1/2 tsp black pepper
1/4 cup parmesan cheese
2 tbs skim milk
6 egg whites
4 eggs

Recipe Directions for Caramelized Fritata

  1. Cook, peel, and cube potatoes.

  2. In a skillet cook onion slices in a small amount of water for 10. Brown but do NOT burn. You may add water 1 TBS at a time so onions caramelize but not burn.

  3. Add potatoes, salt, and pepper.

  4. Stir well, then dump into a bowl.

  5. In a small bowl combine half of the cheese, milk, egg whites, and eggs. Wisk.

  6. Pour egg mix into the potato mix.

  7. Coat pan with spray.

  8. Pour mix into pan and cook over med/high heat until bottom is browned.

  9. Wrap handle in foil.

  10. Put remaining cheese over top of fritatta.

  11. Put pan in oven under broiler for 5 minutes or set.

  12. Cut into 6 pieces and serve.
