Recipe Ingredients for Caramel Sauce

1/2 c water
1 c sugar
1 c heavy cream
1/8 t salt
1/2 t vanilla
1/2 t fresh lemon juice

Recipe Directions for Caramel Sauce

  1. In large saucepan, add water and place sugar in the center of the pan; do not allow sugar ato touch the sides of the pan. Cover & bring to boil over high heat.

  2. Once boiling, remove cover & continue to bowl until the syrup is straw colored & temperature reaches 300F, about 7 minutes.

  3. Reduce heat to medium and continue to cook until syrup is a deep amber and registers 350F, 1-2 minutes.

  4. In a separate saucepan, heat cream & salt & bring to a simmer.

  5. Remove sugar syrup from heat. Carefully our 1/4 of the hot cream into the sugar syrup & let the bubbling subside. Add the remaining cream & lemon juice.

  6. Whisk the sauce gently until smooth.
