Recipe Ingredients for Caramel Sauce

3 cups sugar
2 cups water, warm
1/4 cup corn syrup, light
1/4 teaspoon salt

Recipe Directions for Caramel Sauce

  1. Heat the sugar, 1 cup of the water, the cornn syrup and salt in a large heavy saucepan over medium heat, stirring until the sugar is dissolved. In crease the heat to high and bring the mixture to a boil, washing down the sides with a pastry brush if you see any sugar crystals. Boil, without stirring, swirling the pan toward the end to even out the color, until the caramel is a dark amber color.

  2. Immediately remove the saucepan from the heat and add the reamining 1 cup warm water 2 tablespoons at a time. Return the pan tio low heat and cook, whisking, until the syrup is smooth. Use immediately, or let cool and refrigerate, tightly covered, for up to 3 months. Serve chilled or a troom temperature, or gently reheat before serving.
