Recipe Ingredients for Caramel Corn Test #2 - Lower Butter Approach

1 1/2 cups brown sugar
4 tablespoons corn syrup
4 tablespoons butter
4 tablespoons 2% milk
3/4 teaspoons sea salt
3/4 teaspoons baking soda
1 1/2 teaspoons vanilla (bean paste)

Recipe Directions for Caramel Corn Test #2 - Lower Butter Approach

  1. low heat - boil the brown sugar, butter, corn syrup

  2. allow to boil for 5 full minutes

  3. remove from heat and quickly add at the same time the salt, baking soda and vanilla

  4. stir until fully mixed

  5. pour in the 5 quarts of popped popcorn

  6. put on parchment paper and bake at 250 degrees for 30-40 minutes - stirring every 8-10 minutes

  7. monitor while baking - you dont want to burn the caramel and each oven bakes differently
