Adapted from Too Good to Be True vol.6. A very small slice is good for a snack, a larger one is good as a light breakfast. Just a little caramel chocolate chip in it makes it so good!

Recipe Ingredients for Caramel and Banana Loaf

2 egg whites
1/2 cup brown sugar
1/4 tsp Baking Soda
1/2 cup unsweetened apple sauce
1/2 tsp vanilla essence
1/2 cup white chocolate chips
3/4 cup rolled oats
1/2 cup skim milk
1 1/2 cups self raising flour
1 cup banana

Recipe Directions for Caramel and Banana Loaf

  1. Preheat a fan forced oven to 180 degrees C

  2. Beat egg whites with sugar for 1 minute in a medium mixing bowl.

  3. Add bicarb to the apple sauce so that it froths up and then add the froth to the mixing bowl. Add essence, oats and milk and mix together.

  4. Sift the flour into the bowl and gently fold in. Don't beat the mixture or it will turn leathery. Chop up the banana into little pieces and fold through gently.

  5. Grease a large loaf tin with cooking spray and pour in the mixture. Bake for 40-45 minutes or until the center is firm to the touch. Let rest in the pan for a few minutes, then turn out to cool.

  6. Note: I used caramel flavoured chocolate chips in my loaf, if you can find them, they're great!
