Easy breezy Caprese Pasta, serve hot or cool.

Recipe Ingredients for Caprese Pasta

4 tablespoons extra virgin olive oil
1 lb penne pasta
4 tomatoes
8 oz mozzarella
1 basil
2 tsp red wine vinegar
3 cloves garlic

Recipe Directions for Caprese Pasta

  1. cut up tomatoes and dice mozzarella. Add 4 tbls olive oil and red wine vinegar plus garlic slices. Let sit on counter for hour to two, covered.

  2. Cook penne according to box insructions.

  3. Combine tomato mixture and penne. Serve.

  4. Salt and Pepper to taste.
