Recipe Ingredients for Cappuccino Light Ice Cream

2 tbsp instant espresso powder
1/4 cup water, boiling
3 cups fat free half & half
2/3 cup sugar
1 tsp vanilla extract
1/2 tsp ground cinnamon

Recipe Directions for Cappuccino Light Ice Cream

  1. In a large bowl, dissolve the espresso powder in the boiling water. Let cool.

  2. Add the half-and-half, sugar, vanilla, and cinnamon to the espresso. Whisk to blend. Refrigerate until very cold, at least 3 hours or as long as 3 days.

  3. Whisk the mixture to blend and pour into the canister of an ice cream maker. Freeze according to the manufacturer's directions. Eat at once or transfer to a covered container and freeze up to 4 hours.
