1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
2 large whole (3" dia) Tomatoes, Red, Ripe
0.5 large Onions
1 medium raw Bell Pepper Red
1 tbsp(15 g) Vinegar Balsamic
4 tablespoon Italian Parsley
