A Mediterranean side dish featuring eggplant, peppers, onions, and cumin!

Recipe Ingredients for Caponata

32 oz Eggplant
3 oz Onion Red
6 oz Peppers, Sweet, Red
6 oz Vidalia Onion
1/4 cup Vinegar red wine
6 tsp Cumin
3 clove Garlic
1 tsp Sugars, Granulated

Recipe Directions for Caponata

  1. In a large stock pot, put in:

  2. Eggplant, unpeeled, cut into 1/2" cubes

  3. Red and Vidalia onions, coarsely chopped

  4. Red peppers, coarsely chopped

  5. 3 cloves garlic, minced

  6. 3-6 Tbsp ground cumin (to taste)

  7. 1 tsp sugar

  8. 1/4 cup red wine vinegar

  9. Cook over medium heat covered for 20 minutes, stirring occasionally.

  10. Remove cover and cook another 30 minutes or until thickened.

  11. Season with salt, pepper, additional herbs of your choice to taste.

  12. Serve as a side dish or with crudite, crackers, or pita at room temperature.
