Recipe Ingredients for Caponata

1 eggplant, medium
1 1/2 cup celery, chopped
1/2 cup extra virgin olive oil
1 onion, medium
3/4 cup olives, green, pitted
1/4 cup capers
1 cup tomato sauce
1/4 cup white vinegar
1 tablespoon sugar
1/4 tsp. salt
1/4 tsp pepper

Recipe Directions for Caponata

  1. Grill eggplant til collapsed;cool, peel, chop.

  2. Boil celery in water for 1 minute; set aside.

  3. Saute all ingredients til thick

  4. Adjust seasoning
