Delicious on its own or on topped of crostini or polenta.

Recipe Ingredients for Caponata

1 eggplant
1 tsp salt
2 tbsp olive oil
1 tsp oregano
1 red pepper
2 tbsp pine nuts
2 tbsp red wine vinegar
2 tbsp capers
10 olives
4 tbsp parsley
1 red onion
2 cloves garlic
3 tomatoes

Recipe Directions for Caponata

Heat oil in a large pan. Add your eggplant and season with salt and oregano. Cook on high until eggplant is golden on both sides. Add onion, garlic, red pepper and parsley stems and cook for another couple minutes. Throw in capers, olives and vinegar. When vinegar has evaporated, add tomatoes and simmer for 15 minutes. Season to taste. Stir in chopped parsley leaves and pine nuts and serve.
