Recipe Ingredients for Caponata

1 large eggplant, sliced crosswise
6 tbsp olive oil
1/4 cup onion, chopped
1/4 cup red bell pepper
3/4 cup celery, chopped
4 cloves garlic, minced
28 oz stewed tomatoes
1/8 cup red wine vinegar
1/2 cup black olives
1 tbsp capers
2 tsp oregano
1 tsp basil
2 tsp salt
1 tsp black pepper
1/4 cup pine nuts

Recipe Directions for Caponata

  1. Brown eggplant on both sides with 2 Tbsp olive in broiler, cool then cut in cubes

  2. add remaining olive oil, onion, garlic, celery, and bell pepper to sauce pan and saute until tender

  3. Stir in eggplant, tomatoes with juice, olives, capers, vinegar and seasonings

  4. Simmer until vegetables are tender and juice is thick.

  5. Stir in pine nuts

  6. Serve warm
