wash all the vegetables well and chop ...Sautré the garlic in heated olive oli and shallow fry the chopped vegetables in this order..... aubergines, zucchini, peppers and tomatoes.. tha capers are to be added when the compost is removed from heat.. IDeal as an acompaniment to fish.
