Recipe Ingredients for capers

8 oz. cherry tomatoes, halved
2 tbsp capers, rinsed and drained
2 tbsp chopped fresh dill
2 cloves of garlic minced
2 tsp lemon zest
3 tsp extra virgin olive oil
1/2 tsp salt
1/2 tsp ground black pepper
8 oz penne
1 1/2 lb spinach, trimmed an chopped
1/2 pound tuna steak, cut into 1 inch cubes
1/2 cup crumbled feta cheese

Recipe Directions for capers

  1. Bring large pot of water to boil over high heat.

  2. Meanwhile, in a large bowl combine the tomatoes, capers, dill, garlic, lemon zest, 2 tsp of the oil, 1/4 tsp of the salt, and 1/4 tsp of the pepper. Cook the penne according to package directions until al dente. During the last minute of cooking, add the spinach.

  3. Drain the pasta and spinach together.

  4. Add the pasta and spinach to the tomato mixture and toss gently to combine.

  5. Heat the remaining 1 tsp oil in a large non-stick skillet. Add the tune and cook over medium-high heat for 3-5 minutes, or until just browned.

  6. Add the remaining 1/4 tsp salt and 1/4 tsp pepper and toss.

  7. Add the pasta and spinach mix to the tuna in the skillet. Stir in the feta, tossing well.

  8. Cook until the cheese is melted and the pasta heated through.
