Need an ice cream maker. I replaced the superfine sugar with Splenda. I will have to see if it works. Also, I am going to try adding an egg white (beat to soft peaks) and see what that does.

Recipe Ingredients for Cantaloupe Sorbet

1 melon, cantaloupe, small ripe
1/4 cup orange juice
3/4 cup Splenda
1/2 teaspoon salt

Recipe Directions for Cantaloupe Sorbet

  1. Remove the rind and seeds from the melon. Cut the flesh into 1/2-inch cubes. You should have about 2 heaping cups of fruit. Place the cut-up melon in a blender with the orange juice, sugar and salt. Blend until the melon is pureed and the sugar has dissolved, about 30 seconds. Cover and refrigerate until cold.

  2. Stir the chilled mixture, then freeze in one or two batches in your ice cream machine according to the manufacturer¹s instructions. When finished, the sorbet will be soft but ready to eat. For firmer sorbet, transfer to a freezer-safe container and freeze at least 2 hours.

  3. Yield: about 3 cups; 6 servings.
