Recipe Ingredients for Canolli

1 1/2 c All Purpose Flour
6 tsp Sugar
1 /4tsp salt
6 tsp Olive oil
1 tsp white vinegar
3 oz chianti
1 1/2 c ricotta cheese
6 oz confectioner's sugar
9 tsp bittersweet chocolate
4 1/2 tsp orange rind
4 1/2 tsp pistachios

Recipe Directions for Canolli

  1. Shells-

  2. Pour flour, sugar and salt into a food processor. Add the oil, vinegar and wine.

  3. Process the dough, adding more wine, a few drops at a time if needed.

  4. Mix until smooth.

  5. Wrap dough and refrigerate 2 hours or overnight.

  6. Roll dough to 1/16" thick. Cut 3" rounds. Reroll scraps, letting dough rest at least 15min between rolling.

  7. Bend each round over a cream horn tube, wetting the ends where they meet. Fry at 350 until golden. Remove from tubes immediately.

  8. Filling-

  9. Drain ricotta in a cheesecloth-lined sieve over a bowl overnight, covered with plastic wrap.

  10. Beat drained ricotta with confectioner's sugar until fluffy. Fold in chocolate, orange rind and pistachios. Pipe about 2tbsp of filling into each tube.
