A mixture of beans with escarole and swiss chard cooked in chicken broth.

Recipe Ingredients for Cannellini Beans & Escarole & Swiss Chard Soup

1 tablespoon canola oil
1 cup of onions
2 garlic cloves
1 head of escarole
5 swiss chard leaves
15 oz cannellini beans
14 1/2 oz chicken broth
1/2 tsp thyme, leaves, dried , crushed
1/2 tsp dried marjoram , crushed
2 oz of cooked ham

Recipe Directions for Cannellini Beans & Escarole & Swiss Chard Soup

Take oil and heat in a large pan for a few seconds. Add onions and then garlic and stir in oil for 2 mins. Add cooked ham chunks to pan and stir around with onions and garlic for another 5 mins. Wash and drt escarole and swiss chard. Take the stems o f swiss chard and add to onion and ham mixture a nd stir fry for 5 mins. Chop up escarole and chard and then add to the pan and stir around and mix all veggies and hand well for 1 min. Add salt and pepper to taste. Add chicken broth and heat through. Once broth and soup start bubbling, lower heat and take pan off the stove and place on a heat friendly surface. Take a hand blender and stir the soup to your thickness or thinness. Use a regular blender if you don't have a hand imolsifier. Enjoy!
