Recipe Ingredients for Candied Yams

1/3 cup (80 ml) apple juice
3 tablespoons brown sugar, packed firmly
3 tablespoons (45 ml) maple syrup
2 tablespoons (30 ml) dark molasses
1/8 teaspoon allspice
1/8 teaspoon cinnamon, grounded
3 pounds yams, peeled & cut diagonally into slices .5 inch thick

Recipe Directions for Candied Yams

  1. In a 10- by 15-inch (25- by 38-cm) rimmed baking pan, combine apple juice, brown sugar, syrup, molasses, allspice, & cinnamon. Turn yams in mixture to coat, then arrange in a single layer, overlapping slightly.

  2. Cover tightly with foil & bake in a 375 F (190 C) oven for 20 minutes. Turn yams over, then continue to bake, covered, until very tender when pierced (about 35 more minutes).

  3. Uncover yams & bake for 15 more minutes. Turn yams over & bake until only a thin layer of syrup remains in bottom of pan (about 5 minutes.)

  4. Arrange yams in a serving dish; scrape syrup from pan & drizzle over yams. Season to taste w/ salt & pepper.
