Recipe Ingredients for Candied Ginger Pumpkin Cake

3/4 cup butter
1 1/2 cups sugar
3 eggs
1 1/2 cups canned pumpkin
1/4 cup molasses
1 1/2 tsps vanilla
4 tbl chopped candied ginger
2 1/2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp kosher salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
1/2 cup buttermilk
4 ounces butter
6 ounces cream cheese
1 1/2 tsps rum
4 cups powdered sugar
2 tbl cream

Recipe Directions for Candied Ginger Pumpkin Cake

  1. Grease and flour two 9" cake pans. Preheat oven to 350 degrees F.

  2. Cream butter and sugar until fluffy. Add eggs one at a time, beating well after each addition.

  3. Add pumpkin, molasses, vanilla, and ginger and beat thoroughly.

  4. Sift together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice.

  5. Add the flour alternating with the buttermilk in thirds, beating well after each addition.

  6. Divide between pans and bake 45 to 50 minutes, or until the center tests completely done. Remove from oven and cool 10 minutes before turning out of pans onto a rack to finish cooling.

  7. Meanwhile, beat butter and cream cheese together until blended. Add rum, powdered sugar, and cream, and beat until fluffy - about 5 - 7 minutes. Adjust with sugar or cream to a good spreading consistancy.

  8. Spread about 1/3 of the icing on one layer of the cake. Top with the second layer and remaining icing (the sides of this cake are a very pretty brown and don't need to be iced).

  9. Optional: toss 3/4 cup pecans with 1 Tbl melted butter and 2 Tbl brown sugar. Sprinkle with kosher salt and spread evenly on baking sheet. Bake in the oven along with the cake for about 5 - 7 minutes, or until toasted. Coarsely chop. Sprinkle on the top of iced cake.
