Lentils that fit candida diet, if you don't use the mushrooms

Recipe Ingredients for Candida Lentils

2 cups lentils
32 ounces vegetable broth
1 small carrot
1 large onion
1/2 cup mushrooms
1 tsp olive oil
2 cups spinach
1 tsp ginger
1 tsp garlic

Recipe Directions for Candida Lentils

  1. In skillet with oil, cook carrots, garlic, mushrooms, and onions. Add seasonings as desired, such as pepper, cumin, oregano, etc.

  2. Boil lentils with low-sodium vegetable broth (will have lower sodium than indicated in recipe analysis) and another 32 ounces of water. Add two bay leaves.

  3. Add in vegetables from skillet and cook until lentils are soft

  4. Add in shredded spinach and cook until done.
